YOUR HANDMADE MOROCCAN TAGINE – SEASONING AND CLEANING GUIDE

 

 
 
 
Earthenware tagines for Moroccan cuisine is original in style and won’t be found in any ordinary cookware or homewares store.  Our tagines are all handmade in Morocco.
 
 
The tagine is an impressively sized terra cotta oval cooking dish which can accommodate whole fish, chicken, a reasonable sized roast lamb/beef, any other meat or vegetables and in fact any other gourmet ingredients you may wish to use. Your tagine is designed to cook slowly which allows all the flavours to seal together to create a truly gourmet and delicious dish. It can be used on hot coals, on the BBQ, in the oven or on the stove top.
 
 
Please note that your tagine may often look chipped in some parts as they are handmade then fired in traditional kilns. During this process they may stick together which means they are then hand separated thus leaving an impression of a chip. Small imperfections, such as tight fitting lids and natural colour variations are to be expected and are valued as part of the non-industrial beauty of the product. This in no way affects its performance. Tagines of this type do not have a hole punched on the lid and its presence makes no difference. It is merely a design so please do not feel that there is a fault if your tagine does not have a hole all the way through the lid. In fact the conical lid is the key to the slow cooking process of this tagine. The build up of moisture in the lid is what enables the process of the slow cooking tagine. 
 
 
As these tagines are handmade it is recommended that you hand wash only as they are not tested for dishwashers. Always allow to cool completely before soaking in water. Then all that’s required is hot soapy water and a light scourer and sponge to clean your tagine.
 
 
Please remember not to subject your tagine to high temperatures or sudden temperature changes as this will result in cracking.
 
 
Your tagine must be seasoned before its first use. Soak in water overnight then allow to air dry completely (the air drying process generally takes about 4 hours). Once dry apply a thin layer of olive oil to your tagine and put in oven on very low heat (about 100 °C) for an hour. Your tagine will now be ready to use.

Please note warranty on this product is only for breakages on delivery and must be advised within 3 days of receipt.   Proof of damage may be required so where possible we would advise you take photos of the damage.  It will be at our discretion whether the return of this product is required. 
 
 
It is extremely advisable that you read the instructions enclosed on how to season and care for your tagine prior to its use as it does require to be seasoned before use for the first time.
As this tagine is individually handcrafted it does not always take the strains of mass produced machine made products so please treat it as you would any handmade item. If proper care is taken this tagine will be very durable and prove to be an enjoyment for many years to come.
